Thailand or Chile in November

Hello, I have about 3 weeks for my annual vacation in November and would like to travel to Asia (Thailand, Vietnam or something else) or South America, such as Chile, Paraguay, Uruguay. However, I am also open to other exciting travel destinations. A little about me: I will be 60 in November, thankfully still fit and can still climb mountains as well as carry my own backpack. Unfortunately, I am not yet free to travel without restrictions. Nevertheless, with 30 vacation days a year, I manage well in terms of holidays. Privately, I am single.
